Matt Johnson and Pat Jones met while studying brewing at Heriot-Watt; eighteen months after graduating, they had rebuilt a second-hand brewhouse with their own hands in Leith. Since 2013, Pilot has done everything itself — recipes, brewing, artwork and social media that have become cult favourites — brewing beers unfiltered, unpasteurised and unfined, the first brewery in Scotland to drop isinglass back in 2014. Blønd and Vienna Pale lead the range, flanked by bold moves like Mochaccino Stout and the Peach Melba sour, sold directly from the wee shop at the Stewartfield site.
