Holy Goat Brewing Ltd

Founded in Dundee in 2020, Holy Goat has risen in just a few years to become a European reference for mixed fermentation. Its name salutes the "goat-like" character of Brettanomyces, the wild yeast that matures its golden sours for three to four months before blending and barrel-ageing. Local fruit tells the terroir — tayberries first bred in Dundee, Scottish blackcurrants and cherries — while brewing-archaeology projects, like the recreation of an 1895 export stout recovered from the wreck of the Wallachia, reveal the scale of the ambition. Bottles and cans sell out at the continent's sharpest bottle shops.
