In Staffanstorp, Skåne, Brekeriet has established itself as the Swedish home of mixed fermentation and wild yeasts, openly working with Brettanomyces, lactobacilli and barrel ageing. Cassis, a sour ale with blackcurrant berries, offers lively acidity and deep fruit; Passion Please is a wild ale variant with passion fruit; the barrel-aged series explores complex blends close to the lambic tradition, reinterpreted in the Scanian style. Here, sophistication comes not from hops but from microbial culture: controlled acidity, well-integrated fruit and fine textures, in beers made for tasting that age well.
