Sahtipaja

In Sätila, in Västra Götaland, Sahtipaja devotes itself almost exclusively to the traditional Finnish sahti style, brewed with indigenous yeasts and often flavoured with juniper. The beers generally range from 7–9 per cent, with a dense, unfiltered texture and low carbonation. Flavours include ripe banana, clove and resin. Some experimental versions incorporate variations in the grains or the malt drying process. The brewing process relies on a warm, rustic fermentation, resulting in powerful, authentic beers deeply rooted in a Nordic tradition rarely explored in Sweden.
